Step 1
How to make skillet tomato pizza? Prepare the ingredients. Use either 1 large egg or 2 small ones. Instead of tomato sauce, you can use ketchup.
Step 2
How to make pizza batter in a skillet? Put mayonnaise and sour cream in a bowl, crack in the egg. Add a little salt, keeping in mind the mayonnaise is already salty. Mix the wet ingredients. Gradually add flour, mixing well after each addition. You should get a batter like thick sour cream - thicker than pancake batter. You may need a bit less or more flour; go by the consistency.
Step 3
Take a nonstick skillet (mine is 24 cm / 9.5 in). Grease it with a drop of vegetable oil. Pour the batter into the skillet and spread it into a thin layer, shaping a small rim around the edges.
Step 4
Spread tomato sauce or ketchup over the base. You can make your own by blending a peeled fresh tomato and adding sugar and salt. Sprinkle with spices - Italian-style herbs work well. I used oregano.
Step 5
Rinse the tomatoes under running water, pat dry, and slice into very thin rounds.
Step 6
Grate the cheese on a coarse grater. Choose real cheese with no added vegetable fats.

Sprinkle the pizza base with the grated cheese.
Step 8
Arrange the tomato slices on top so they cover the whole surface.
Step 9
Place the skillet over low heat. Cover with a lid and cook for about 15 minutes, until the crust is done - dry on top and nicely browned underneath. Timing is approximate and depends on batter thickness, skillet, and your stove.

Serve the pizza sprinkled with herbs. Enjoy your meal!
