Skillet-Stewed Cod with Onion and Carrot
A hearty fish dish that goes with any side. Suitable for both adults and children. With cod, it is hard to think of anything simpler than stewing it with vegetables like carrot and onion. Despite its simplicity, this dish is delicious both cold and hot.

- tablespoon - 20 ml

Preparation
Step 1
Wash and peel the carrot. Grate it on a coarse grater. A coarse grater is needed here so the carrot does not turn into mush during stewing.
Step 2
Peel the onion and slice it into quarter rings.
Step 3
Heat the sunflower oil in a pan and add the vegetables to fry for 7 minutes. Keep the heat at medium. Stir from time to time so the carrot and onion do not burn. At the end of frying, salt the vegetables.
Step 4
Prepare the coating mixture for the fish. In a flat plate, mix the flour, paprika, salt, and dried basil. If desired, you can add pepper to the mixture.
Step 5
Cut the cod fillet into serving-sized pieces.
Step 6
Coat each piece of fish in the flour and spice mixture on all sides.
Step 7
Add the bay leaf and a couple of allspice berries to the pan. Place the cod in the pan on top of the vegetables. Pour in boiling water. Cover with a lid and stew for 20 minutes, until done.
