Preparation
Step 1
Take the butter or margarine, eggs, and milk out of the refrigerator 1-2 hours before baking. The butter should become soft, and the milk and eggs should reach room temperature so the dough turns out well. Use all-purpose flour and large eggs. Separate 1 egg into yolk and white. Crack the egg in the middle and divide the shell into 2 halves. Pour the egg back and forth between the shell halves until all the white runs into a bowl.
Step 2
The yolk will remain in the shell. Set the yolk aside, you will need it later. Beat 1 whole egg and 1 egg white with the sugar in a deep bowl that is convenient for mixing dough. Since I do not like overly sweet cookies, I used 120 g sugar instead of 150 g, which is about 1/2 cup plus 1 tbsp instead of about 3/4 cup. If you have a similar taste, do the same.
Step 3
Add the salt, baking powder, and butter. Beat everything thoroughly until smooth. If a few small lumps of butter remain, that is not a problem. It will not affect the taste.
Step 4
Add the milk and mix well.
Step 5
To aerate the flour and make the cookies lighter, sift it first. Add half of the flour to the bowl and mix. Then add the rest in small portions until you get the needed consistency. When it becomes difficult to mix with a spoon, start kneading with your hands.
Step 6
The dough should turn out soft and tender, but it should not stick to your hands. Gather it into a ball, place it in a bowl, and cover it with a towel or napkin. Put it in the refrigerator for 30 minutes. Turn the oven on to preheat to 200°C (390°F).
Step 7
Take the reserved yolk and place it in a small bowl.
Step 8
Add the sour cream to the yolk and mix until smooth. The glaze for brushing the cookies is ready.
Step 9
Roll out the chilled dough on a clean, dry work surface into a sheet about 1 cm thick, about 3/8 inch. Cut out round pieces using a cookie cutter or a small cup. If needed, roll out the dough several times so you use it all. A standard large baking tray from your oven will work for baking.
Step 10
Dust the tray lightly with flour, transfer the cookies onto it, and brush the tops with the glaze using a silicone pastry brush. After all the cookies are brushed, use a fork to make a pattern. To do this, draw waves by lightly pressing the fork tines onto the tops of the cookies. Bake in the preheated oven on the middle rack for 30-35 minutes. The time may vary depending on your oven. The finished cookies will rise slightly and turn golden.
