How to marinate honey mushrooms for winter? Gather the mushrooms in the forest. This recipe uses autumn honey mushrooms - light brown ones with small scales on their caps.

Carefully sort through the mushrooms, removing forest debris, dirt, leaves, and grass. Rinse them thoroughly several times in clean cold water. Cut large mushrooms into pieces if needed, leaving small ones whole.

Place the mushrooms in a pot, pour in cold water, and set over high heat. When the water starts boiling, skim off the white foam with a spoon. Reduce heat to medium and simmer for 30 minutes.

Drain the mushrooms in a colander and rinse under running cold water.

Peel the onion and garlic. Cut the garlic cloves into halves or quarters. In a large pot, pour in fresh water, add the mushrooms, garlic, bay leaf, cloves, peppercorns, and onion.

Place the pot on the stove. Add salt and sugar. Bring to a boil, then reduce the heat to low and cook for another 10-15 minutes. At the end, pour in the vinegar and simmer for a few more seconds. Remove the onion - it has already given its flavor to the marinade.

Distribute the mushrooms among sterilized jars and pour the hot marinade over them. Seal with sterilized lids, turn the jars upside down, wrap with a towel, and leave at room temperature until completely cool.

Done! Store the marinated mushrooms in a cool place for long-term keeping - a refrigerator or cellar works best.
