Simple Kefir Raisin Loaf Cake
Incredibly tasty and tender - for the coziest tea time! This simple kefir raisin loaf cake works on the first try. It has a delicate sponge-like texture with a slightly moist crumb. Serve it with powdered sugar or a chocolate glaze.

Step 1
How do you make a simple homemade kefir raisin loaf cake in the oven? Prepare the ingredients. Margarine can be replaced with butter. Melt the margarine (or butter) in the microwave or over a double boiler and cool to room temperature. Take the kefir out of the fridge in advance.

Crack the eggs into a large mixing bowl.

Add salt and vanilla sugar. Vanilla sugar can be replaced with vanillin.

Add regular sugar.

Use a mixer to beat everything until smooth.

Pour the melted margarine or butter into the egg mixture.

Mix well until fully combined.

Put the raisins and 1 tablespoon of wheat flour onto a plate.

Toss the raisins with the flour.

Put the remaining flour and starch into a deep bowl.

Add baking soda and baking powder to the flour.

Mix the dry ingredients well and sift them into the bowl with the wet mixture. Sifting aerates the flour, making the cake fluffier. Keep in mind you may need a little more or less flour.

Bake at 180°C (356°F) for 40-50 minutes. Adjust to your oven - more time may be needed. Check doneness with a toothpick: insert it into the center and pull it out right away; if it’s dry, the cake is done. Leave the finished cake in the switched-off oven for about 20 minutes.

Remove the pan from the oven and take the cake out.

Sprinkle with powdered sugar to taste and cut into portions.
