Shulyum Pork Soup at Home
A rich, incredibly flavorful, and hearty soup! Shulyum made with pork is prepared from the simplest ingredients. It’s delicious, filling, and perfect for a family lunch or dinner. Adults and kids alike will love it.

Preparation
Step 1
Which part of pork is best? For shulyum, any cut works, but the best are those with small layers of fat - they make the broth richer. If using frozen pork, thaw it beforehand.
Step 2
Cut the pork into equal-sized pieces. Don’t make them too small - pieces just slightly smaller than a matchbox will stay juicy and flavorful in the soup.
Step 3
A cauldron or a thick-bottomed pot works great for cooking shulyum. I usually use a pot. Place the meat pieces in it and pour in cold water. The amount depends on how thick you want your soup to be.
Step 4
Put the pot over high heat. When it starts to boil, add a peeled onion and a bay leaf. Skim off any foam - otherwise, the broth will turn cloudy. Add salt to taste, reduce the heat to low, and cook the meat covered until tender, about 1 hour.
Step 5
Meanwhile, peel the potatoes, onion, and garlic. Rinse them in clean water. Rinse the herbs as well.
Step 6
Cut the potatoes into pieces roughly the same size as the meat.
Step 7
When the pork is tender, remove the boiled onion from the broth. Increase the heat and add the potatoes and a few black peppercorns. Once it boils again, lower the heat to medium and cook until the potatoes are soft - about 20-30 minutes, or until they break easily when pressed.
Step 8
Finely chop the onion, garlic, and herbs.
Step 9
Add the chopped onion, garlic, and herbs to the pot. Add your favorite spices if desired. Let simmer for a few seconds, then remove from heat.
Step 10
Allow the shulyum to sit for a while before serving. Sprinkle with ground allspice when serving. The rich pork soup is ready — enjoy!
