Preparation
Step 1
How to bake a shortcrust apple pie? Prepare all ingredients and the needed tools (springform pan, bowls for filling and dough, knife, vegetable peeler, cutting board). Take the butter out of the fridge in advance - you need it softened.
Step 2
First make the filling. Choose apples to taste. If you like tart apples, use usually green apples. If you prefer sweeter, choose red varieties. Wash the apples well. Peel them with a vegetable peeler, remove the core and seeds, then cut into small pieces no larger than about 0.4 × 0.4 in (1 × 1 cm).
Step 3
Add the juice of 1 lemon, brown sugar, starch, and cinnamon to the apples. Mix and leave for 30 minutes at room temperature so the apples release juice. Note: Adjust the sugar amount depending on the apples’ tartness and your preference.
Step 4
Now make the dough. Sift flour with baking powder. Add the remaining ingredients: sugar, softened butter, 1 egg, a pinch of salt, and lemon zest (I grated it on a fine grater). Mix with your hands, rubbing everything together until the dough turns into crumbs and small pieces.
Step 5
Line the bottom of a springform pan with parchment (my pan is 24 cm / 9.5 in). Pour 2/3 of the dough crumbs into the bottom, level out, and lightly press.
Step 6
Spread the apple filling over the base.
Step 7
Evenly sprinkle the remaining dough crumbs on top. Preheat the oven to 180°C / 356°F. Bake for 35-45 minutes, until the top is golden. The exact baking time depends on your oven.
Step 8
If you like, dust the pie with powdered sugar before serving. Enjoy your tea time!
