Shaped Shortcrust Pie with Raspberry Jam

Step 1
How to make a shortcrust pie with raspberry jam? Measure out the ingredients. For shortcrust dough, the butter and milk should be quite cold.

Mix the flour with the baking powder and sift into a bowl.
Step 3
Add the sugar to the flour mixture and stir.
Step 4
Grate the cold butter on a coarse grater into the flour mixture.
Step 5
Quickly rub everything together with your hands.
Step 6
Beat the egg with a fork together with cold milk until smooth.
Step 7
Make a well in the buttery flour crumbs and pour in the egg-and-milk mixture. Stir first with a spoon.

Then quickly bring the dough together with your hands, forming a ball. Don’t knead long, so the butter doesn’t melt from hand warmth. The dough doesn’t have to be perfectly uniform - small butter flecks are fine. The faster you mix shortcrust, the more crumbly the bake will be. Wrap the dough in plastic wrap and refrigerate for 1 hour.

Shape the pie directly on parchment paper so it’s easy to transfer to a baking sheet. Roll out the chilled dough into a round sheet 0.5-0.8 mm thick.

Leave the center for the sweet filling. Divide the remaining ring into 12 symmetrical parts.

On each part, make cuts of the same width on both sides. Make cuts in the middle too, but don’t cut all the way through.

Fold the middle part of each segment toward the center.

Then roll it up into a small roll toward yourself.

Join the ends of the side cut strips at the bottom of the roll.

Shape the whole pie the same way.

Spoon any thick jam into the center. You can use berry or fruit jam, preserves, fruit spread, or confiture.

Sprinkle almond flakes around the edge of the filling.

For brushing, lightly beat the egg with milk until smooth.

Transfer the parchment with the pie onto a baking sheet. Brush the edges with the egg wash using a pastry brush.

Bake in a preheated oven at 190°C / 374°F for about 25 minutes, until golden. Don’t overbake so the edges don’t dry out. Baking time may vary depending on your oven.
