Sesame Crackers
A simple recipe for crunchy beer snacks! French-style sesame crackers bake very fast. No unnecessary additives. Bonus: by changing sugar and salt, you can make them sweet or savory.

Preparation
Step 1
How to make crackers? Prepare all the necessary ingredients. Use any refined vegetable oil. Use all-purpose flour (highest or first grade). I used white sesame, but you can use black sesame or a mix. Instead of sugar, you can use a heat-stable sweetener.
Step 2
Sift most of the flour into a deep bowl. Add salt and sugar and mix well so they distribute evenly. Sifting helps remove tiny impurities and aerates the flour for a lighter dough.
Step 3
Add the vegetable oil. Rub the flour mixture with the oil using your hands until you get fine, even crumbs.
Step 4
Pour in water in small portions and knead, gathering the dough into a ball.
Step 5
If the dough is too sticky, add a little flour at a time and knead until it’s the right consistency - slightly firm and not sticking to your hands.
Step 6
Divide the dough into 2 parts. Roll out one half on nonstick parchment into a rectangular sheet no thicker than 4 mm (about 1/8 inch). If you’re not sure the parchment is nonstick, lightly grease it with vegetable oil. Trim uneven edges and add the trimmings to the second half of the dough. Spread half the sesame evenly over the rolled dough. Press it in by rolling over it with a rolling pin.
Step 7
Cut into squares with a straight or crinkle cutter - size as you like. Mine were about 2×2 cm (about 3/4 inch). Prick each cracker with a fork in several places so they bake evenly and turn crunchy. A standard large baking sheet works well. Transfer the parchment with the dough onto the sheet. Bake in a preheated 180°C / 350°F oven until lightly golden, about 15 minutes. Exact time depends on your oven.
Step 8
While the first batch bakes, prepare the second half for baking the same way.
