Semolina Porridge with Carrots

Step 1
How do you cook semolina porridge with carrots? Prepare the ingredients. Use sweet, juicy carrots - two small ones are enough. Any milk fat % works. You can swap brown sugar for white sugar, but cane sugar adds caramel notes. You can also cook it with water for a fasting/vegan version - just sauté the carrots in vegetable oil instead.

Wash the carrots well under running water with a brush, peel them, trim the ends, and grate on a medium grater.
Step 3
Place a heavy-bottomed saucepan over low heat (milk porridge is less likely to scorch in it). Melt a piece of butter. Add the grated carrots. Add sugar (white or brown). Sauté, stirring, for a few minutes until the carrots soften.
Step 4
Pour the milk into the carrots and bring to a boil. In a thin stream, add the semolina while stirring vigorously with a spoon so no lumps form. Adjust the semolina to get the thickness you want - thin or thick. With these proportions, the porridge is thick.
Step 5
Cook over low heat for 3-4 minutes. It will thicken and start to bubble - be careful not to burn yourself. At the end, I added a small pinch of salt to balance the sweetness.

The carrot semolina porridge is ready. Spoon it into bowls, add a little butter, and serve. Enjoy!
