Step 1
How do you make seaweed and squid salad? Prepare the ingredients. If the squid is frozen, thaw it in advance. Use a fresh medium-sized cucumber. For the pumpkin, you need the flesh only; the weight is given without the skin. Use marinated seaweed - you can marinate it yourself in advance or buy it ready-made in a jar. I use olive oil for the dressing, but you can use any vegetable oil. Put water on the stove for boiling the squid.

Wash the squid bodies under cold running water, remove the skin, and take out all the insides. Lightly salt the boiling water for the squid and lower the squid bodies into it. Boil for 2 minutes, then remove the squid. Let it cool on a plate. Do not cook the squid longer, otherwise it will become tough and may spoil the salad. For a more attractive look, you can use mini squid.
Step 3
Peel the pumpkin and cut it into thin strips. You can do this with a knife or use a Korean carrot grater. Boil the sliced pumpkin in the squid broth for 3-4 minutes, depending on the thickness of the strips. Drain in a colander, let the water drain off, and cool. Place the boiled sliced pumpkin in a salad bowl.

Cut the cooled squid into thin strips and add it to the salad bowl with the pumpkin.

Remove the seaweed from the jar and drain off all the liquid. Add the needed amount of seaweed to the salad.

Rinse the cucumber and dry it with paper towels. Cut the fresh cucumber into thin strips and add it to the salad.
Step 7
Lightly salt the salad if needed, and add ground black pepper or other spices to taste. Dress the salad with a small amount of vegetable oil. Mix the salad and serve.

The salad can be served as a standalone dish, a snack, or a main meal for people following a lighter diet. As an appetizer, it goes well with potato or rice dishes. Enjoy!
