Seafood Fried Rice
A flavour-packed seafood fried rice with tender squid, shrimp, crab meat and eggs, stir-fried over high heat with soy and oyster sauce for a satisfying meal.

Preparation
Step 1
Cook the rice in advance and let it cool completely. Or use leftover rice.
Step 2
To tenderise the squid, add baking powder and a few tablespoons of water, mixing well to coat. Leave for about 10 minutes, then thoroughly rinse off the baking powder and water and set the squid aside.
Step 3
Season both the squid and the shrimp with soy sauce and a little ginger.
Step 4
Heat some vegetable oil in a hot wok or frying pan. Fry the squid for about 3 minutes, then remove and set aside. Fry the shrimp separately for about 3 minutes, then set aside as well.
Step 5
Season the eggs with salt to taste, then fry them in the wok. Remove and set aside. If the eggs are slightly undercooked, that’s fine - they will finish cooking later.
Step 6
Return the wok to a high heat and add a little more oil if needed. Fry the garlic, the white parts of the spring onions, and the green chillies until fragrant.
Step 7
Add the carrots, peas and crab meat, stirring well to combine.
Step 8
Return the squid and eggs to the wok, add some soy sauce, and mix thoroughly.
Step 9
Add the rice, stir everything together, then add the oyster sauce and more soy sauce. Taste and adjust the seasoning with additional soy sauce if needed.
Step 10
Stir in the shrimp, green bell peppers and a drizzle of sesame oil, mixing well.
Step 11
Finally, add the green parts of the spring onions, give everything a final stir, and turn off the heat. Serve hot.
