Step 1
How do you make a savory crepe cake? Prepare the ingredients. Take the milk and eggs out of the refrigerator in advance, as the batter mixes better with warm ingredients. Add the ginger and pepper to taste, they are optional.
Step 2
First make the crepes. How do you make the crepes? Crack the eggs into a suitably sized bowl. Beat the eggs with the salt and sugar. You can use either a mixer or a regular whisk.

Pour the warm milk and warm water into the eggs and mix.

Sift the flour and baking soda into the batter and mix. Sifting not only removes any possible impurities from the flour, but also aerates it, which makes the crepes softer and fluffier. Add the ground pepper, salt, and ground ginger.

Mix the batter until the lumps disappear. It should become slightly thick. If the batter is too thick, thin it with warm water or warm milk until it reaches the right consistency. If the batter is too thin, add a little more sifted flour. A lot depends on the size of the eggs and the quality of the flour. Let the batter rest for 10-15 minutes so the flour absorbs all the liquid, this will improve its texture.

On a frying pan lightly greased with vegetable oil, cook the crepes on both sides until golden. Stack the finished crepes one on top of another.
Step 7
Prepare the ingredients for the cheese and sprat filling. The smoked processed cheese can be replaced with any other cheese: processed cheese or a regular hard cheese. Choose a natural cheese without vegetable fat additives. Remove the sprats from the can, taking off as much oil as possible.

How do you make the filling? Mash the sprats with a fork.

Grate the smoked processed cheese on a coarse grater.

Combine the sprats, cheese, and mayonnaise. You can use store-bought mayonnaise or make it yourself at home.

Mix the filling well. The first filling is ready.

Prepare the ingredients for the egg and garlic filling. Boil the eggs in advance and let them cool. Peel the garlic.

Peel the eggs and grate them on a coarse grater.

Press the garlic through a garlic press.

Combine the eggs, garlic, mayonnaise, salt, and pepper. Mix well. The second filling is ready.

Assemble the cake. Place the first crepe on a large plate and spread it with the sprat filling.

Cover it with the second crepe and spread it with the egg filling.

Continue this way, alternating the fillings, until you form a tall cake. The smaller the diameter of your frying pan, the taller the cake will be. Do not spread anything on the top crepe.

Decorate the top of the cake with sliced boiled egg, sprats, and parsley. Put it into the refrigerator for a couple of hours so it can soak through, then serve. Enjoy your meal!
