Sausage Muffins
A breakfast no one can refuse! Sausage muffins replace the usual sandwiches. This is a tasty and wholesome homemade snack. They are also very quick to make and will save the day when guests are already at the door. The sausage and cheese filling is very hearty and delicious.

Step 1
How do you make sausage muffins with kefir in the oven? Prepare all the necessary ingredients. Use all-purpose flour and large eggs. Choose any sausage and cheese you like best. Parsley and dill work well as the herbs. You can use just one of them if you prefer.

Take a deep bowl for making the batter. Crack the eggs into it. Beat them with a fork or whisk. There is no need to beat them until foamy. Preheat the oven to 180°C (350°F).
Step 3
Melt the butter in any convenient way. Cool the melted butter to room temperature. Stir it and pour it into the egg mixture, then add the kefir. Mix everything until smooth.

Now take a larger bowl. Keep in mind that you will add the filling to this same bowl later. Sift in most of the flour and the baking powder, then mix so the baking powder is evenly distributed and the batter rises evenly. Sifting the flour helps aerate the batter and makes it lighter.
Step 5
Pour the liquid mixture into the dry ingredients. This order helps the batter turn out better. Mix everything well and, adding the remaining sifted flour in small portions, bring the batter to the right consistency. It should be like thick sour cream. Because flour can vary depending on the producer, the amount needed may differ.

While the batter is resting, prepare the filling. Cut the sausage into small cubes. Grate half of the cheese on a fine grater and cut the other half into cubes like the sausage. This way the ingredients will distribute evenly throughout the batter. Wash the herbs under running water, dry them on a towel or napkin, trim off the tough parts, and chop them with a knife.

Add the filling to the bowl with the batter and mix thoroughly until the mixture becomes uniform.

Use muffin or cupcake tins for baking. There is no need to grease the tins, because the batter already contains enough butter. Fill the tins about 2/3 full, leaving room for the batter to rise. Bake the muffins for 30-35 minutes on the middle rack of the oven at 180°C (350°F). The exact time depends on your oven and the size of the tins. The finished muffins will rise and turn golden brown.
