Step 1
How to make a salad with sun-dried tomatoes? Prepare the ingredients from the list. You can use store-bought or homemade sun-dried tomatoes - it doesn’t matter. I recommend using salad onion (red onion). Choose any cheese you like; I used Parmesan. Olives can be replaced with black olives - use black instead of green if you prefer.
Step 2
Remove the olives from the brine and pat dry. Cut each olive in half. Wash the arugula and pat dry. Remove the sun-dried tomatoes from the oil and pat dry as well.
Step 3
Slice the Parmesan (or any other hard cheese) into thin shavings. If you don’t want to slice it, you can grate the cheese instead.
Step 4
Peel the onion and slice into thin strips. Chop the arugula or tear it by hand into smaller pieces. Add the sun-dried tomatoes whole or slice them.
Step 5
In a suitable salad bowl, combine the arugula, olives, sun-dried tomatoes, and onion.

Prepare the ingredients for the dressing. Instead of balsamic vinegar, you can use any table vinegar, or replace the vinegar entirely with lemon juice. Instead of olive oil, you can use any other vegetable oil. If you don’t want to add sugar, replace it with something else or omit it completely.

In a bowl, combine balsamic vinegar, lemon juice, olive oil, salt, and sugar.

Mix the dressing well.

Pour the prepared dressing over the salad.

Mix everything well, distributing the dressing evenly.

Transfer the salad to a serving plate. Sprinkle the top with Parmesan shavings.
