Salad with Smoked Chicken Breast, Beans and Croutons
From simple ingredients, quickly - a little celebration every day! The salad with smoked chicken breast, beans and croutons is great for a quick snack or for dinner. It is very filling on its own, and thanks to the tomatoes and carrots it is also juicy. This salad is good enough to serve on a festive table too!

Preparation
Step 1
You can adjust the vegetable part of the salad to your taste. Canned beans can be white, red or a mix of both.
Step 2
You can use store-bought croutons and vary the flavor of the salad depending on the seasonings, or make croutons yourself. They can be from white or dark bread, as you prefer. Wheat croutons soften faster in the salad, so I always choose rye ones. Cut rye bread into small cubes and dry them on a baking tray in the oven at 180°C (about 355°F) for 15-20 minutes. Cool the ready croutons.
Step 3
Drain all the liquid from the canned beans and put the beans into a colander. It is best to rinse the beans with cold water to remove the remaining thick brine. Pat the rinsed beans dry.
Step 4
Boil the carrot in advance until tender and let it cool. Then peel it and cut into medium cubes.
Step 5
Remove the skin and bones from the smoked breast and cut the meat into small cubes. You can replace the breast with meat from smoked chicken legs.
Step 6
Cut the tomatoes into medium pieces. The tomatoes should be juicy but firm. Very soft fruits don’t hold their shape well and during cutting and mixing will turn into a shapeless mass and spoil the appearance of the dish.
Step 7
Wash the herbs, pat dry and chop finely. Instead of dill you can use other greens: parsley, green onion and so on.
Step 8
In a bowl combine the smoked chicken, beans, tomatoes, carrot, croutons, chopped herbs and the garlic pressed through a garlic press.
Step 9
Dress the salad with mayonnaise. If you like, you can add salt and pepper, but personally I very rarely add spices to salads with mayonnaise.
Step 10
If you are not going to serve the salad immediately or within the next 10-15 minutes, it is better not to add the croutons and mayonnaise yet. Croutons quickly soften and turn into bread mush, especially wheat ones. Mix everything thoroughly and serve right away. Enjoy!
