Rustic Oven-Baked Unpeeled Potatoes

Step 1
How to cook the most delicious rustic oven-baked potatoes with spicy adjika and fragrant seasonings that will definitely impress with their great taste? First, prepare all the ingredients needed to make this wonderful spiced potato dish.

To make the seasoning sauce, press four garlic cloves through a garlic press into a small bowl, then add 1/2 teaspoon khmeli-suneli, 1/2 teaspoon paprika and 1/2 teaspoon a mix of red and black ground pepper.

Add some hot adjika to the bowl to taste and mix all the ingredients well.
Step 4
Add one heaping tablespoon of dried parsley, basil and dill to the same bowl and mix everything together.
Step 5
Pour in 60 ml of vegetable oil.
Step 6
Mix all the ingredients in the bowl thoroughly - your seasoning sauce is ready. Let it sit for a little while so it becomes infused with the spices.

Cut 1 kg of thoroughly washed, unpeeled potatoes into fairly large wedges.

Put the potato wedges with skin into a large bowl.

Add the rested sauce to the bowl with the potatoes, then mix everything well with your hands so each piece is evenly coated.

Transfer the sauced potatoes from the bowl to a baking sheet and spread them out in an even layer, then place the baking sheet into an oven preheated to 200°C (about 392°F).
Step 11
Bake the potatoes in the oven for about 40 minutes. After around 20 minutes of cooking, add salt to taste.

Arrange the cooked rustic potatoes with sauce on serving plates and serve with herbs or tomatoes to your taste.
