Step 1
How do you make Royal Cottage Cheese Pie? Prepare the necessary ingredients. Use frozen butter. I used all-purpose flour, which is best suited for sweet rich baking.
Step 2
Sift the flour through a sieve into a wide bowl, add the sugar, salt, and baking powder, and mix. Keep in mind that you may need a little more or a little less flour than I did, so use the dough consistency as your guide.
Step 3
Quickly grate the frozen butter on a coarse grater so it does not have time to warm up too much from your hands.
Step 4
Add the dry ingredient mixture to the grated butter.
Step 5
Rub everything together until you get sandy crumbs. They should be fairly loose and crumbly. Important: do this very quickly so the butter does not melt from the warmth of your hands. If shortcrust dough is worked too long, the butter softens, the dough becomes dense and tough, and the crumbs will turn hard after baking. After quickly rubbing the mixture together, place the pan or bowl with the crumbs into the refrigerator.

Meanwhile, prepare the filling for the pie. You can use cottage cheese of any fat content. The higher the fat content, the more delicate the filling will be. Smooth cottage cheese is the most convenient to use. If it is grainy, blend it until smooth.
Step 7
If your blender is not large enough to process all the cottage cheese at once, add most of it first. Add the eggs, sugar, and vanilla sugar, and blend.
Step 8
The volume of the mixture will decrease. Add the remaining cottage cheese.
Step 9
Blend everything until smooth and creamy. This will make the filling very delicate.
Step 10
Grease the bottom and sides of the baking pan with vegetable oil. I used a springform pan 22 cm, about 8 3/4 inches, in diameter, with the bottom lined with parchment paper. Put half of the chilled crumb mixture into the pan. Press it down with your hands, distributing it evenly over the bottom, and at the same time form sides around the edges. The crumb mixture shapes well.
Step 11
Spread the cottage cheese filling over the crumb base and level it out.
Step 12
Sprinkle the remaining crumb mixture over the top so it evenly and completely covers the cottage cheese filling. Gently smooth the surface of the pie.
Step 13
Bake the pie in a preheated oven at 180°C (350°F) for about 40 minutes, until the top is golden brown. The baking time may differ depending on your oven.

Cool the finished pie, cut it into pieces, and serve. Enjoy your meal!
