Roasted pumpkin
Simple roasted pumpkin seasoned with olive oil, butter, and thyme, baked until tender with golden caramelised edges.

Preparation
Step 1
Preheat the oven to 180°C / 350°F / Gas 4.
Step 2
Place the pumpkin halves in a roasting tin, positioning them cut-side up.
Step 3
Drizzle the pumpkin with olive oil and dot the surface with small pieces of butter. Season generously with salt and freshly ground black pepper, then scatter the thyme leaves over the top along with a few whole thyme sprigs.
Step 4
Roast in the oven for 45-50 minutes, until the squash becomes tender and lightly golden-brown in places. Serve warm.
