How to make a Roasted Bell Pepper Salad? First, prepare all the necessary ingredients and spices for this simple yet festive appetizer.
Step 2
Line a baking tray with foil. Place 2.6 lb (1.2 kg) of well-washed bell peppers on it. Preheat the oven to 400°F (200°C) and bake for about 15 minutes. Then flip the peppers and leave them in the turned-off oven for another 5 minutes. Adjust the time according to your oven.
Step 3
For the dressing, pour 3 tablespoons of vegetable oil into a small bowl. Add 1 teaspoon of salt, 1 teaspoon of sugar, ½ teaspoon of ground pepper mix, and 1 teaspoon of khmeli-suneli (a Georgian spice blend).

Add 1 tablespoon of lemon juice to the same bowl.
Step 5
Press 1 head of garlic through a garlic press and add it to the bowl.

Mix all the ingredients thoroughly and set the bowl aside.

Remove the tray with roasted peppers from the oven and transfer the peppers into a suitable dish. Cover with foil and let them cool slightly.

Make a small cut in each cooled pepper and pour the collected juice into the bowl with the garlic dressing.

Peel each pepper, remove the stems, and take out the seeds.

Slice the peppers into 1 cm (½ inch) wide strips and place them in a deep bowl.

Pour the prepared garlic dressing over the sliced peppers.

Add finely chopped cilantro, dill, and parsley to taste.

Mix all ingredients thoroughly, then refrigerate the salad for 2 hours to let the flavors blend.
