Risotto in Cream Sauce with Shrimp

Step 1
How do you make risotto in cream sauce with shrimp? Prepare the listed ingredients for making the risotto. You need special rice for risotto - Arborio or another variety suitable for this dish; I used medium-grain Arborio. The shrimp should be pre-cooked. The fish stock should be hot; if you do not have it, you can replace it with hot water. I used 10% cream. Use a hard cheese, for example Parmesan.
Step 2
To make the risotto, use a deep frying pan or a pot or saucepan with a thick bottom. Pour the olive oil into the pan and heat it. Peel the onion and chop it finely. Sauté the chopped onion in the oil until translucent. Do not use high heat, so it does not start to burn.
Step 3
Add the risotto rice to the onion in the pan and cook everything together for about 2 minutes over medium heat, stirring constantly.
Step 4
Pour the dry white wine into the pan with the rice and let the alcohol evaporate for 2-3 minutes.
Step 5
Next, add a ladle of fish stock to the pan and cook the rice until the liquid has completely evaporated. If the stock is already salty, there is no need to salt the rice further, according to taste. But if the stock is unsalted or you are using hot water, you can salt the rice a little. As soon as the stock evaporates, add another ladle. Again, cook until the liquid evaporates.
Step 6
When the rice is almost ready - slightly firm on the outside, but not hard, and soft inside - add the peeled shrimp, with the shell, head, tail, and intestinal vein removed, and continue cooking for about 2 minutes. Do not forget to stir the rice.
Step 7
Pour the cream into the risotto, stir, and heat the rice with the cream for 1-2 minutes. At this stage, you can also add part of the cheese by grating it on a fine grater. Stir the rice with the cheese.
Step 8
Serve the finished risotto immediately after cooking. Spoon the rice with shrimp onto each plate and sprinkle with grated cheese. This is a complete dish on its own. You can offer a glass of dry white wine with Italian risotto.
