Rich Yeast Pies with Cabbage Filling (Baked in the Oven)

Step 1
How to easily make fluffy pies with a filling of cabbage, carrot and onion in the oven that many people will love for their wonderful taste? First, prepare all the necessary ingredients and spices for homemade pastries from rich yeast dough with juicy cabbage.
Step 2
To make the dough, sift 500 g of all-purpose wheat flour into a large bowl, then add 2 tablespoons sugar, 8 g instant dry yeast, 1/2 teaspoon salt, 1 teaspoon baking powder and mix all the dry ingredients well.
Step 3
Take a deep bowl and crack in 1 egg, beat it, then pour in 150 ml warm milk and 150 ml boiled water at room temperature. Mix everything very well.
Step 4
Pour the liquid base into the bowl with the flour mixture, then mix all the ingredients together and start kneading the dough.
Step 5
Gather the dough into a ball and pour in 2 tablespoons vegetable oil.
Step 6
Continue kneading the dough by hand until smooth and elastic, about 10 minutes.
Step 7
Put the smooth, elastic dough back into the bowl, cover with a kitchen towel and place it in a warm spot for 1 hour.
Step 8
For the filling, grate 1 small carrot on a coarse grater, finely chop 1 medium onion and place the vegetables into a skillet set on the stove with 50 ml vegetable oil.
Step 9
Shred 500 g white cabbage into thin strips and add it to the same skillet.
Step 10
Add salt to taste, then mix the vegetables and sauté them for about 5 minutes.
Step 11
Add to the skillet dried basil, dill, parsley, cumin (zira), paprika, khmeli-suneli, 2 cloves of garlic passed through a press and 1 tablespoon tomato paste.

Add a mixed pepper blend to taste and 50 g butter, then stir everything together.
Step 13
Cover the skillet with a lid and continue stewing the cabbage over very low heat, stirring occasionally, for 10-15 minutes, then cool the filling to room temperature.
Step 14
After the resting time, lightly flour the work surface and place the dough on it. Gently knead it and divide into 12 equal pieces, shaping each into a small ball. Cover the balls with a kitchen towel for 15 minutes.

Then, one by one, press or roll each ball into a flat round of the desired size and put 1 heaping tablespoon of the cooled filling in the center. Carefully pinch the edges together to seal the pies well.
Step 16
Shape the pies as you like and place them on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them proof for 20 minutes.

After that, brush the pies with a beaten egg yolk mixed with 2 tablespoons milk and place the baking sheet into a preheated 175°C (about 345–350°F) oven.
Step 18
After 20-25 minutes, remove the baking sheet from the oven and brush the hot pies with 30 g melted butter, then transfer them to a serving plate.
