Rich Yeast Hand Pies in the Oven
Incredibly delicious, fluffy, soft, tender, and airy! Rich yeast hand pies in the oven can be made with any filling, sweet or savory. Mine are filled with apples, raisins, and sugar. They are baked in the oven, so they do not leave your hands greasy. They are convenient to take on the road, to work, or on a picnic.

Step 1
How do you bake rich yeast hand pies with apples? Prepare the necessary ingredients for the dough. All the products should be at room temperature. Use all-purpose flour. With it, yeast pastries turn out especially fluffy and airy.
Step 2
To activate the yeast, combine 1 teaspoon of sugar, the yeast, and 50 ml (about 3 tablespoons) of milk in a small bowl. The milk should be warm, 35-38°C (95-100°F), but not hotter. Mix everything and leave it for 15-20 minutes until a foamy cap appears.
Step 3
Sift the flour into a suitably sized wide bowl through a fine sieve. This will enrich the flour with oxygen, and the dough will rise better and turn out fluffier.

Melt the butter over low heat and let it cool slightly.
Step 5
For making the dough, take a wide and stable bowl so it is convenient to knead in it. The bowl should have enough volume and height so the dough has room to rise. Beat the eggs with the salt until smooth.

Add the sugar and beat again.

Add the activated yeast and the remaining milk, then mix.

Melt the butter in any convenient way. Let it cool slightly and add the melted butter to the dough. Mix.

Add the sifted flour. You can sift it again if you wish. Do not add all the flour at once. Depending on the flour, you may need a little more or a little less, so judge by the consistency. First stir the dough with a spoon.

Then add the flour in small portions, mixing the dough each time and watching its consistency.

The dough turns out very soft and pliable. It may stick to your hands just a little. Do not try to fix this by adding more flour, or you may end up with stiff dough. Such dough will rise for a long time, and the baked goods will turn out heavy. Cover the dough with a towel and leave it to rise in a warm place for 1 1/2 to 2 hours.

Prepare the ingredients for the filling. You can make any filling for these hand pies. I chose a filling of apples and raisins. Use sugar to taste depending on the sweetness of the apples. Sort the raisins, rinse them, and dry them.

Wash and dry the apples, peel them, and remove the seeds. Cut the apples into small cubes.
Step 14
Add the rinsed and dried raisins, sugar, and cinnamon. Mix everything well.

When the dough has increased in volume by 2 to 2 1/2 times, you can begin shaping the hand pies.

Gently punch down the dough and place it on a floured work surface. Divide the dough into equal pieces depending on the desired size of the hand pies.

Roll each piece of dough into a round flat cake.

Place the filling in the center.

Shape the hand pie however you like, sealing the edges well.

Shape all the hand pies this way. Place them seam-side down on a baking sheet lined with oiled parchment paper. Cover the hand pies with a towel and let them proof for 15 minutes.

In a small bowl, beat a raw egg with a fork until smooth.

Brush the tops of the hand pies with the beaten egg.

Bake the hand pies in a preheated oven at 180°C (350°F) for about 20-25 minutes until golden brown. When the hand pies are ready, remove them from the oven together with the baking sheet.
