Rice with Ground Meat and Tomato Paste in a Skillet

You get a very flavorful yet budget-friendly dish that you can serve for both lunch and dinner - and easily vary by adding other ingredients!

Preparation
Step 1
You can use ground meat from any type of meat. I will cook with pork mince. Use long-grain rice so it doesn’t overcook and stays fluffy. Rinse it several times in cold water and drain off all the water.
Step 2
Put the rice into boiling water and add a little salt. Cook the rice until done, following the instructions on the package. This usually takes about 20 minutes. The cooked rice should be soft. You can slightly undercook it, as it will finish cooking during stewing. Drain the cooked rice in a colander and rinse it lightly with water. Leave the rice so that the excess liquid can drain off.
Step 3
Peel the onion and carrot and rinse them under running water. Finely chop the onion and grate the carrot on a coarse grater.
Step 4
Pour a little vegetable oil into a hot skillet and add the vegetables. Fry them for 3-5 minutes over low heat. The vegetables should become softer. Don’t forget to stir them from time to time so they don’t start to burn.
Step 5
Then add the prepared ground meat to the skillet. Mix it with the vegetables and fry everything together for about 10 minutes, until the mince changes color. Adjust the exact time according to your stove.
Step 6
Next, add the tomato paste and a little hot water. Season with some salt and spices to taste. Stir, cover with a lid and simmer over low heat for 15–20 minutes. During this time the ground meat will cook through completely.
Step 7
Add the prepared boiled rice to the skillet and mix it with the meat. Simmer everything together for another 10 minutes so the rice heats through and finishes cooking.
Step 8
This rice with ground meat will look especially attractive on the table if you serve it in portions. To do this, put the rice into a serving ring, press it down slightly so it is denser, then remove the ring. Serve with fresh vegetables and herbs. Enjoy your meal!
