Rice Porridge with Water and Milk

Preparation
Step 1
Choose short-grain rice for the porridge. It contains more starch and cooks to a pleasant, creamy consistency. The ratio of milk to water can vary - I use 50/50. Choose any milk fat content you prefer.

Rinse the prepared rice in cold water, then drain off all excess liquid.
Step 3
It’s best to use a non-stick pot for cooking - this prevents burning. Pour water into the pot and bring it to a boil. Add the rinsed rice, stir, and bring to a boil again. Cook the rice over low heat, stirring occasionally, until it absorbs all the water - about 5-7 minutes.
Step 4
Then pour in hot milk and stir. Add salt and sugar to taste.

Continue cooking for another 10 minutes. Adjust the thickness by adding hot milk or water - more liquid makes it thinner. When the rice becomes soft, remove the pot from the heat and let the porridge rest, covered, for 10-15 minutes.
Step 6
After resting, the porridge will thicken even more. If it’s too thick, add a bit of hot liquid. The rice porridge is ready! Serve with a pat of butter and enjoy your meal!
