Raw Beet Salad with Cheese and Pear

Preparation
Step 1
It’s best to choose young, juicy beets, not wilted, with firm skin. If the beets are small, you can take not 2, but 3 pieces.
Step 2
Lightly toast the walnuts in a dry frying pan and chop them with a knife. If you wish, you can replace the walnuts with cashews, hazelnuts or pine nuts. Or instead of nuts, add peeled sunflower seeds toasted in a dry pan.
Step 3
Crumble the cheese or cut it into small pieces. You can use any cheese, the main thing is that it is not hard. Brined cheeses like feta or brynza, soft brined cheese, Adyghe cheese, cottage cheese, blue cheese, brie or camembert will all work well. Keep in mind that if the cheese is quite salty, you should be careful with extra salt in the salad.
Step 4
Wash the lettuce leaves, dry them and chop finely. I used frillice lettuce - it is juicy, easy to cut and looks pretty. Instead of frillice you can use other greens, for example spinach, arugula or a ready salad mix.
Step 5
Peel the beets and grate them on a grater for Korean-style carrots.
Step 6
Peel the pear, remove the seeds and grate it on the same Korean-style grater. It’s best to choose a ripe pear of a firm variety so that you get long, straight, fairly stiff shreds. Since pear darkens rather quickly, it’s best to grate it last, right before mixing all the ingredients.
Step 7
In a bowl combine the grated beet and pear with the chopped lettuce leaves.
Step 8
Sprinkle everything with lemon juice, add salt and pepper and mix. Again, remember that you should salt the salad taking into account how salty the cheese is. If your cheese is salty, you may not need any extra salt at all. So taste the cheese before adding seasonings.
Step 9
Transfer the salad to a serving plate. Drizzle it with olive oil on top and sprinkle with the cheese and walnuts. Enjoy your meal!
