Rabbit Stewed in Sour Cream in the Oven

Step 1
How to bake rabbit stewed with sour cream in the oven? Prepare all the ingredients from the list. In the recipe, a 1,200 g (about 2.6 lb) carcass was used, so the amounts of the other components were doubled. Rabbit meat can have a distinctive aroma; to reduce it, soak the carcass in cold water for a few hours.
Step 2
Cut the rabbit into portion pieces. Rinse and pat the meat dry with paper towels to remove excess moisture. Peel the onion and garlic.

In a small bowl, mix a ground pepper blend and salt (I also added a little herbes de Provence).
Step 4
Rub each piece all over with the mixture, pressing it into the meat. Leave at room temperature for a while - 20-30 minutes is enough. You can also refrigerate it for a few hours; the longer it marinates, the tastier the dish will be.
Step 5
Heat vegetable oil in a heavy-bottomed skillet. Add the rabbit pieces and sear on each side until an appetizing golden crust forms. Sear over high heat so the meat “seals” on the outside and the juices stay inside each piece.
Step 6
Slice the onion into rings. Place some of the rings on the bottom of a baking dish, then arrange the seared rabbit on top.
Step 7
Spread the remaining onion over the meat.
Step 8
In a deep small bowl, mix sour cream, water, and garlic pressed through a garlic press. Add a pinch of salt and ground pepper if desired. My sour cream was very thick, so I used a bit more water than stated in the recipe. The sauce should be the consistency of thick cream.
Step 9
Spread the sauce evenly over the meat and onions. Cover the dish with foil and bake in a preheated oven. Set the temperature to 180-220°C (356-428°F), top and bottom heat, and bake for about 1 hour to 1 hour 15 minutes.
Step 10
Then remove the foil and bake until done and golden. It took me about 30-40 minutes. Time and temperature may vary from those given, depending on your oven.
Step 11
Sprinkle the finished dish with fresh herbs. Serve.
