Qutab Flatbreads with Herbs and Cheese
Tasty, appetizing, made from simple ingredients and great for a quick snack! Qutabs with herbs and cheese are flatbreads made from thin dough with a fragrant filling. In this recipe the dough is scalded with boiling water. Such dough is especially elastic and soft, can be rolled out very thin and does not tear during cooking.

Step 1
How to make qutabs with herbs? Prepare the ingredients. Besides hard cheese you can use suluguni or Adyghe-type cheese. If you use brined cheese, there is no need to salt the filling. For the greens you can take any seasonal herbs: spinach, basil, nettle, cilantro, mint, lettuce leaves.
Step 2
First, make the dough. How to make the dough? Mix the flour with salt, then sift it into a bowl.

Add the vegetable oil.
Step 4
Pour boiling water into the flour and knead the dough. At first use a spoon, then, when the dough is no longer too hot, knead with your hands. If the dough turns out too runny, add a bit more flour; if it is too stiff, add a little more boiling water. Remember that you may need more or less flour than stated.
Step 5
Knead the dough until it becomes smooth and uniform. Wrap the dough in plastic wrap and leave it to “rest” for half an hour. During this time the gluten in the flour will develop and the dough will become soft and elastic.

While the dough is resting, prepare the filling. How to make the filling? Rinse the herbs thoroughly. Remove any thick stems if there are any. Dry the greens well and chop them finely.

Grate the cheese on a coarse grater.
Step 8
By this time the dough is ready. Roll it into a log and then cut it into 6 equal pieces.
Step 9
Roll each piece out on a floured surface into a very thin round flatbread.

On one half of the flatbread place 2-3 tablespoons of the filling.

Fold the second half over the filling and pinch the edges tightly together. Shape the remaining qutabs in the same way.
Step 12
Heat a frying pan. Fry the qutabs in a dry pan over medium heat on both sides until golden.

Brush the hot qutabs with melted butter on one side and then on the other.

Serve the qutabs hot with sour cream or any sauce you like. Enjoy your meal!
