Quick tomato chutney
A quick and flavourful tomato chutney made with shallots, garlic, vinegar, and sugar, gently cooked until soft, caramelised, and perfectly balanced between sweet and tangy.

Preparation
Step 1
Place the oil into a small saucepan and warm it over medium heat until hot.
Step 2
Add the shallots, tomatoes, and garlic to the pan and cook gently for 5-8 minutes, stirring occasionally, until the vegetables soften and begin to release their juices.
Step 3
Pour in the vinegar and sprinkle in the sugar. Continue cooking for another 3-5 minutes, stirring regularly, until the mixture thickens and begins to caramelise slightly, forming a rich, glossy chutney.
Step 4
Serve immediately while warm.
