Quick Tea Brew Cake with Jam
Light, appetizing, and bright - made from ingredients you always have on hand! This quick tea brew cake is perfect when you have a bit of jam left, even sugared jam. With just a few ingredients, you’ll get a delicious homemade dessert in no time!

Preparation
Step 1
Use premium-grade flour. You can replace part of the wheat flour with whole-grain if you wish. Adjust the sugar to taste - use less if your jam is very sweet.
Step 2
Pour 200 ml (about ¾ cup) of boiling water over one tea bag of black tea. The brew should be strong. Squeeze and discard the bag.
Step 3
In a bowl, add sugar and one egg. Beat with a mixer until fluffy. It’s important to use a mixer at this stage - properly whipped eggs ensure the cake’s light texture.
Step 4
While stirring constantly, slowly pour in the hot tea to prevent the egg from curdling. Stir with a whisk or on low mixer speed. You’ll get a light foam on top.
Step 5
Add vegetable oil and mix. Then add jam and stir until smooth.
Step 6
Gradually add sifted flour, mixing until the batter is smooth. The exact amount may vary depending on egg size, jam thickness, and flour quality.

Add baking soda and mix well. You can also sift it together with the flour. Depending on your jam’s acidity, you may substitute soda with baking powder. Use soda for tart jams (like currant, cherry, or orange), and baking powder for sweet jams (like apricot).

The batter should be smooth and semi-thick, similar to batter for a charlotte cake. Note: when using sour jam (like cherry), the batter may turn grayish, while sweet jams (like apricot) keep a golden color.
Step 9
Acidic jams (cherry, currant) can change the batter color to gray. During baking, the outer part turns golden, while the center stays slightly gray - but it doesn’t affect taste or texture. Choose the jam you prefer; both options are delicious!
Step 10
Pour the batter into a baking pan (7-8 inches / 18-20 cm). If you use a silicone pan, you don’t need to grease it. Metal, ceramic, or glass pans should be greased with butter. Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, until a toothpick comes out clean. If the top browns too quickly, cover with foil.

Cool the finished cake on a rack, dust with powdered sugar if desired, and serve. Enjoy your tea cake!
