Quick Skillet Khachapuri with Cottage Cheese
This quick skillet khachapuri is ready in about 20 minutes. The soft cottage cheese dough is cooked without oil until golden, then topped with plenty of melted cheese and an egg yolk.

Preparation
Step 1
Prepare the ingredients. Use soft cottage cheese for a smoother, more tender dough. Rice flour can be replaced with another type of flour. Choose any flavorful cheese that melts well.
Step 2
Place the cottage cheese in a bowl. Separate the egg into white and yolk, taking care to keep the yolk whole. Add the egg white to the cottage cheese and set the yolk aside.
Step 3
Add the salt and mix the cottage cheese and egg white thoroughly with a fork.
Step 4
Add the flour and baking powder and knead into a dough. Do not add all the flour at once; judge by the consistency. The dough should stop sticking to your hands while remaining soft, so you may need slightly more or less flour.
Step 5
Place the dough on a board and shape it into a thin boat with a spoon, keeping in mind that the dough will rise slightly while cooking.
Step 6
Heat a nonstick frying pan over high heat. Add the shaped dough, reduce the heat to very low and cover with a lid. Cook for 4–5 minutes, until the underside is golden.
Step 7
Flip the boat so the golden side faces up. Gently press it down with a spatula, as the dough will have risen. Sprinkle with cheese grated on a medium grater, cover and cook over the lowest heat for another 3 minutes.
Step 8
Once the cheese has completely melted, make a small well in the center with a spoon and add the reserved egg yolk. If using a pasteurized egg, cover and cook for another 1–2 minutes so the yolk sets slightly on top while remaining soft inside. If using an unpasteurized egg, cook until the yolk is fully set.
Step 9
Serve the khachapuri immediately while hot.
