Quick-Marinated Zucchini Ribbons
Light, tangy and wonderfully flavorful! Paper-thin zucchini ribbons quickly absorb the aromatic garlic, lemon and vinegar dressing, so this simple appetizer can be served almost immediately.

Preparation
Step 1
Prepare the ingredients. Choose a very young, small zucchini with thin skin and barely developed seeds. If possible, use zucchini of different colors for a more attractive appetizer. You can replace the sugar with honey.
Step 2
Prepare the marinade by pouring the vegetable oil into a small bowl. Choose a flavorful unrefined oil, such as sunflower, olive, sesame or pumpkin seed oil. Add the red wine vinegar or replace it with rice, apple cider or distilled vinegar. Peel and press in the garlic, then add the sugar and lemon juice.
Step 3
Season the marinade with salt and ground black pepper to taste, then mix well.
Step 4
Rinse and dry the zucchini and trim off the ends. Use a vegetable peeler to cut it lengthwise into very thin ribbons. Alternatively, cut it into thin rounds with a knife.
Step 5
Place the zucchini ribbons in a bowl, pour over the marinade and mix gently. Leave them to marinate; the longer they rest, the stronger and tangier their flavor will become.
Step 6
Arrange the marinated zucchini ribbons on a plate, garnish with fresh herbs and serve.
