Step 1
Drain the chickpeas thoroughly and rinse them under cold running water. Set aside a small handful of whole chickpeas to use later as garnish.

Place the remaining chickpeas into a food processor along with the lemon juice, garlic, cumin, salt, tahini, and water. Blend the mixture until it becomes completely smooth and creamy, scraping down the sides as needed to ensure an even texture.
Step 3
Taste the purée and adjust the seasoning if necessary, adding more lemon juice, garlic, cumin, or salt according to your preference.

Transfer the hummus onto a serving plate and use the back of a spoon to spread and smooth the surface evenly. Drizzle generously with extra virgin olive oil and scatter the reserved whole chickpeas over the top.
Step 5
Finish by sprinkling with paprika.
Step 6
Warm the pita bread in a moderate oven for 3 minutes, then cut into quarters and serve alongside the hummus.
