Quick Crispy Pickled Cabbage in a Jar
Very tasty, made from a minimum of ingredients, and a great addition to any table! Quick crispy pickled cabbage in a jar is popularly called “one-day cabbage” because of the preparation time. In fact, you can eat it after just 8 hours. The marinade gives it a light sweet-and-sour note. It is an excellent appetizer for both weekdays and holidays.

Step 1
How do you make quick crispy pickled cabbage in a jar? Prepare all the necessary ingredients. White cabbage will work well, and use a medium-sized carrot. I will use frozen prepared carrots. It is best to use coarse or medium table salt. With it, the cabbage turns out tastier and keeps longer.
Step 2
First, prepare the vegetables for the quick cabbage in a jar. Remove the wilted outer leaves from the cabbage, wash it well, and dry it by placing it on a cotton towel or paper towels. Finely shred it with a knife or a food processor, removing the core and the tough leaf stems. With this kind of slicing, the cabbage looks more appetizing and pickles faster. Transfer it to a deep bowl so it is easy to mix the cabbage with the carrot.
Step 3
Peel and rinse the carrot. Grate the carrot on a coarse grater. In this form, it will marinate faster and give the cabbage slightly sweet notes.
Step 4
Add the shredded carrot to the cabbage and mix well until evenly combined. Transfer the vegetables to a clean 3-liter glass jar. You can use another container for pickling, as long as it holds at least 3 liters. The material it is made of must not oxidize. Enameled, ceramic, and glass dishes are ideal. If you plan to store the cabbage for a long time, the jar must be sterilized.
Step 5
Prepare the marinade. To do this, bring water to a boil in a saucepan with a capacity of at least 1 liter over high heat. Once the water boils, reduce the heat to medium, add the salt, sugar, vinegar, and oil, and stir well until the salt and sugar dissolve completely. Bring it back to a boil and remove from the heat.
Step 6
Pour the hot marinade over the cabbage in the jar. Pack the vegetables down so that they are completely submerged in the marinade, otherwise they will pickle unevenly. Cover with a lid and place in the cold for 12 hours. After this time, the crispy cabbage with vinegar is ready.
