Quail Egg Appetizer Skewers

Step 1
Prepare the ingredients. Boil the quail eggs in advance and leave them to cool. Choose a cucumber that is as even in width as possible so the finished appetizers look neater. You can use herb-flavored cream cheese. If using plain cream cheese, choose any fresh herbs you like, such as dill, parsley or basil. Use sturdy cocktail picks so they hold the ingredients securely.
Step 2
Peel the boiled eggs and cut them in half. Trim a small amount of egg white from the pointed end of each half so it stands upright.
Step 3
Cut the cucumber into thick rounds that are slightly narrower than the eggs. Cut each round in half. You can use a crinkle cutter to give the cucumber pieces decorative edges.
Step 4
Rinse the herbs, dry them thoroughly and chop them finely.
Step 5
Add the chopped herbs to the cream cheese and mix thoroughly. Transfer the mixture to a piping bag fitted with a small closed-star nozzle. This step is optional.
Step 6
Place a cucumber half cut-side down, with the rounded edge facing upward. Carefully insert a cocktail pick through a quail egg half from the yolk side, holding it at a slight angle. Insert the pick into the cucumber at the same angle. Pipe the cream cheese around the pick. Alternatively, pipe the cheese onto the egg first, then insert the pick and attach it to the cucumber.
Step 7
Prepare all the remaining appetizers in the same way. Using a small spoon, place a little red caviar on top of the cream cheese and press it in gently so it stays in place.
Step 8
Arrange the appetizers on a serving plate and serve.
