Pumpkin Waffles with Corn Flour
These pumpkin waffles are made with corn flour, which gives them a pleasantly crisp texture. The pumpkin flavor is mild, while sour cream and vanilla make the waffles soft and aromatic.

Preparation
Step 1
Prepare the ingredients. Use sour cream with at least 15% fat. Take the eggs out of the refrigerator beforehand so they can come to room temperature.

Peel the pumpkin and finely grate it.
Step 3
In a bowl, combine the room-temperature eggs with the sugar and vanillin and whisk until smooth. Add the sour cream and mix well.
Step 4
Add the corn flour sifted together with the baking powder and mix until smooth. Add the grated pumpkin and mix thoroughly.
Step 5
The batter should be thick but still pourable. Leave it to rest for 10–15 minutes so the corn flour can absorb some of the moisture from the pumpkin.
Step 6
Preheat the electric waffle maker. Add a portion of batter and cook the pumpkin waffles for 3–5 minutes, or until golden.
Step 7
Transfer the cooked pumpkin waffles to a plate and serve.
