Pumpkin Cream Soup with Potatoes and Basil

Preparation
Step 1
Prepare all the ingredients.
Step 2
Wash the pumpkin, peel it, and cut it into cubes.
Step 3
Cut the potatoes into cubes as well.
Step 4
Grate the carrot or cut it into small cubes.
Step 5
Cut the onion into medium cubes. Finely chop the garlic.
Step 6
Pour vegetable oil into a preheated pot, then add 50 g of butter. This helps keep the butter from burning too much.
Step 7
Add the garlic first and sauté for about 30 seconds. Then add the onion and sauté until translucent. I sauté everything over high heat.
Step 8
Add the carrot to the pot and sauté for 3 minutes.
Step 9
Add the potatoes and sauté for 3 minutes as well.

Add the pumpkin last and sauté everything for 5-7 minutes. Then pour in 700 ml (about 3 cups) of water (or broth) and cook for 20-25 minutes, until fully tender.
Step 11
Blend the soup into a smooth puree using an immersion blender.
Step 12
The soup is ready. Ladle it into bowls and garnish with pumpkin seeds. Taste and enjoy. Bon appetit!
