Potato Waffles in a Waffle Maker

Preparation
Step 1
Prepare the needed ingredients from the list. You can replace regular flour with any gluten-free flour: corn, oat, rice, etc. Just keep in mind you may need a little more or less flour depending on the type.

Wash the potatoes thoroughly under running water using a brush. Peel, rinse, and cut into cubes.

Boil the potatoes in salted boiling water until tender, about 20 minutes. The exact time depends on the potato variety and the cube size.

Drain the potatoes. Mash into a smooth purée with a potato masher (not a blender). A blender can make the purée gluey; a masher keeps the texture right.

Pour the milk into a small saucepan, add the butter, and warm over low heat without boiling. The butter should melt and combine with the milk.

Pour the hot milk-and-butter mixture into the hot mashed potatoes and mix. Let the mixture cool to room temperature.

Wash, dry, and finely chop the parsley. If you like, replace or add other herbs (dill, cilantro, green onions), or skip the herbs altogether.

Add the eggs to the cooled potato mixture and mix well. The mash must be cooled, otherwise the eggs will set too quickly.

Add the sifted flour with a pinch of salt and mix. The potato batter should be thick and sticky but slightly pourable. If it’s too runny, add a bit more flour. Stir in the chopped herbs and mix.

Preheat the electric waffle maker. Spoon in some potato batter and bake for about 3-5 minutes until golden. If the waffles stick, lightly grease the plates with vegetable oil before each waffle. Bake longer for crispier waffles, shorter for softer ones (timing may vary by appliance).

Place the finished Viennese-style potato waffles on a plate and serve. If you like, add sour cream or another sauce. Enjoy!
