Preparation
Step 1
How to make potato pancakes with caviar? Prepare all ingredients. Use large potatoes (my potatoes weighed 800 g with skins on), large eggs (size C1), and premium all-purpose wheat flour. For the sauce, use sour cream of any fat content, depending on how thick you like it: 10% for a thinner sauce or 20% for a richer one. Use any fresh herbs you like.
Step 2
Peel the potatoes and boil until tender; do not salt the water. To cook faster, cut the potatoes into a few pieces. When done, drain - there should be no liquid left in the pot.
Step 3
Return the pot to the stove and, over very low heat, evaporate any remaining moisture without scorching the potatoes. Mash into a purée with a potato masher. Unlike classic mashed potatoes, you may leave a few small lumps here.
Step 4
Sift the flour directly into the pot with the potatoes, season with salt and pepper, and mix well.
Step 5
Add sour cream to the mashed potatoes, crack in the eggs, and add the egg whites. Mix everything very thoroughly. You should get a medium-thick potato batter.
Step 6
Rinse the fresh parsley and green onions, shake off the water, lightly dry, and chop. Add the chopped herbs to the potato batter and mix.
Step 7
Heat vegetable oil well in a skillet. Once hot, spoon the potato batter into the pan as small pancakes using a tablespoon.
Step 8
Fry the potato pancakes over medium heat on both sides until golden brown.
Step 9
Now make the sauce. In a bowl, whisk together sour cream and cream cheese, seasoning lightly with salt to taste.
Step 10
To serve, arrange the pancakes on a platter. Top each with a little red caviar and the sour cream–cream cheese sauce, then sprinkle with chopped herbs.
