Potato Dumplings (Potato Gnocchi-Style)
Fast, simple, inexpensive, and made from everyday ingredients! Potato dumplings are like lazy dumplings, only made from potatoes. They are prepared from mashed potatoes, and even yesterday’s leftovers work perfectly. You can serve the dumplings as an independent dish or as a side.

Preparation
Step 1
You can cook mashed potatoes from scratch or use already prepared mash. The amount of starch is approximate; you may need more or less depending on the consistency of the potato dough.
Step 2
Wash the potatoes well and peel them. Cut into small pieces, put them into a pot and pour over clean cold water.
Step 3
Put the potatoes over medium heat, salt the water and bring to a boil. Cook the potatoes for about 20 minutes. Check doneness with a sharp knife - it should easily pierce the pieces.
Step 4
Drain off the water and let the potatoes cool down to a warm state.
Step 5
Mash them into a purée using a potato masher.
Step 6
Add the egg and mix the potatoes with a spoon. Add the flour and a little starch. Knead the dough. Gradually add more starch so you get a soft dough that is not too stiff.
Step 7
Take a portion of dough and place it on a floured board. Roll it into a rope and cut into small pieces about 1.5 cm (about 1/2-2/3 inch) wide. Roll each piece into a ball.
Step 8
Form the dumplings: dip your finger in starch and press it into the center of each ball, making an indentation about halfway through its thickness.
Step 9
Put a large pot of water on the stove. Salt it and bring to a boil. Drop the dumplings into the water. It’s better to cook a small amount at a time so they don’t stick together. At first they will sink to the bottom, then float up. As soon as the dumplings float, they are ready; remove them with a slotted spoon. Add the next batch and cook all the dumplings this way.
Step 10
Serve the finished dumplings immediately, with butter, sour cream, fried onions or tomato sauce. Enjoy your meal!
