Potato and Cheese Flatbreads
Fragrant, soft, made from inexpensive ingredients, and absolutely delicious. They are made from simple kefir dough with ingredients available to everyone. Generously brushed with butter on top, they turn out tender and very tasty.

Preparation
Step 1
How do you make potato and cheese flatbreads? Prepare the necessary ingredients for the filling. Choose fresh cheese or brined cheese. It should not be too salty, but it should not be bland either. A simple fermented cheese, suluguni, or brined white cheese will work. You can also combine them, for example, simple fermented cheese and brined white cheese. I used simple fermented cheese.
Step 2
How do you make the filling for flatbreads in a frying pan? First wash the potatoes under running water with a brush, peel them, and cut them into 2 or 4 pieces. Boil the potatoes in salted water until tender, about 25-30 minutes.
Step 3
Take the simple fermented cheese, grate it on a coarse grater, and place it on a plate or in a bowl. Set the cheese aside for now, we will need it soon.
Step 4
Drain the water in which the potatoes were cooked. The amount of potatoes and cheese is usually taken in equal proportions. I used 250 g boiled potatoes (about 9 oz).
Step 5
While the potatoes are still hot, add the grated cheese so that it has time to melt.
Step 6
Mash the potatoes with the cheese into a smooth purée-like mixture. Set the finished filling aside and let it cool.
Step 7
How do you make kefir dough for flatbreads? Take kefir; it can be any fat content. The higher the fat content, the tastier the dough will be. The kefir should not be cold. Take it out of the refrigerator in advance, or warm it slightly on the stove or in the microwave.
Step 8
Sift the flour beforehand through a sieve or with a flour sifter cup. This will enrich it with oxygen and make the finished baked goods airier.
Step 9
Pour the kefir into a suitably sized bowl, add the baking soda, and mix. Leave the kefir for 10 minutes so the baking soda can react. Many bubbles will appear on the surface.
Step 10
Add salt to the kefir. Add about 3/4 of the sifted flour and mix. Do not add all the flour at once. Depending on the flour, you may need a little less or a little more.

The dough is still quite sticky.

Add the remaining flour in small portions, mixing the dough each time.
Step 13
The dough should turn out soft, not stiff. Cover it with plastic wrap and leave it for 30 minutes. During this time, the dough will become more pliable and elastic, and it will be easier to work with.
Step 14
Divide the dough into equal parts depending on the desired size of the flatbreads.
Step 15
On a floured table, roll a piece of dough into a round flat cake that is not too thin.
Step 16
Divide the filling into portions according to the number of flat cakes. Place one portion of filling in the center of each flat cake.
Step 17
Bring the edges of the dough up and join them above the filling to form a pouch, then pinch well.
Step 18
Lightly flatten the dough with the filling using your palm, then roll it out with a rolling pin into a thin flat cake. Do this carefully so the dough does not tear.
Step 19
Heat a dry frying pan. Fry the flatbread over moderate heat on one side until golden brown.
Step 20
Turn the flatbread over to the other side and fry until done. During cooking, the flatbread will puff up. Pierce it from the side with a skewer to release the steam.
Step 21
Brush the hot flatbread on top with a piece of butter, coating the edges well.
Step 22
Stack the finished flatbreads one on top of another. This way they will become even softer and stay hot longer. Traditionally, the whole stack of flatbreads is cut into 4 parts before serving. Be sure to serve the flatbreads hot. Enjoy your meal!
