Preparation
Step 1
Prepare the ingredients. Choose boneless pork. The original recipe uses 20% fat sour cream.
Step 2
Cut the pork into slices and gently pound them with a meat mallet.
Step 3
Cut the pounded pork into thin strips.
Step 4
Heat a frying pan, add a little vegetable oil and add the pork. Fry until lightly browned.
Step 5
Peel the onion and cut it into half-rings or slightly smaller pieces.
Step 6
Add the onion to the pork, stir and cook together over low to medium heat for about 10 minutes, until the onion softens.
Step 7
Sprinkle the flour evenly over the meat and stir well to coat the pork.
Step 8
Add the sour cream to the pan, stir and heat everything together for a couple of minutes.
Step 9
Add the tomato paste, season with salt and ground black pepper, and mix well. Cover and simmer over low heat for about 20–25 minutes, until the pork is tender. If the sauce becomes too thick, add a little water or meat broth.
Step 10
Once the meat is tender and the sauce has thickened, serve the pork stroganoff hot. Mashed potatoes make an especially good side dish.
