Preparation
Step 1
How do you fry pork steak? Prepare the ingredients. For this recipe it is better to use fresh meat rather than frozen, otherwise the finished meat may turn out dry. Which cut of pork you choose depends on the kind of meat you prefer. If you like fattier pork, use pork belly. If you prefer meat with a small amount of marbling, use pork neck. If you like leaner meat, use ham or loin.

Rinse the meat and dry it well with paper towels. We will be frying it in a pan with oil, so if even a drop of moisture gets into the pan, there will be a lot of splattering. So dry it really well. Cut it into steaks about 1 cm thick, about 1/2 inch. Do not make the steaks too thick, as they may not cook through, but very thin steaks are not suitable either, because they will be too dry.
Step 3
Lightly pound the meat with a meat mallet or the blunt side of a knife. It is better to cover the meat with plastic wrap first and then pound it through the wrap. This will help you avoid a lot of splatter while pounding.
Step 4
Season the pieces of meat with pepper. I use a pepper blend, but you can use just one type, black pepper or red pepper. You can also add any favorite seasonings of your own, such as garlic powder, khmeli-suneli, or something else.
Step 5
Brush the meat on both sides with 1 tablespoon of vegetable oil.
Step 6
Heat the remaining oil in a frying pan. For frying, you can use any vegetable oil, from regular sunflower oil to olive oil, but it must be refined so that it does not burn in the pan.
Step 7
Place the meat into the well-heated oil and fry over fairly high heat for about 7 minutes. A crust should form on the meat that seals the juices inside.
Step 8
Then carefully turn the meat over and fry it on the other side for another 5–7 minutes.
Step 9
Add salt to the meat at the very end. Do this specifically at the end, because salt draws out the juices and may make the meat dry.
Step 10
Serve the steak hot immediately after cooking. Enjoy your meal!
