Step 1
How to cook pork rib soup with potatoes? First, prepare the ingredients. Fresh pork ribs can be replaced with smoked ribs. You can swap or add vegetables to taste. The vegetable amounts are approximate - adjust the proportions as you like.

Rinse the pork ribs and cut them into segments. If you wish, trim off excess fat to reduce calories. You can also pre-sear the ribs until golden.

Peel the carrot. Slice half the carrot into rounds. Peel the onion and cut it in half. Leave one half whole.

Pour water into a pot. Add the ribs, half the carrot, and the whole half onion. Bring the broth to a boil and simmer over medium heat for 30-35 minutes, skimming off foam. It’s best to use filtered or bottled water with a neutral taste.
Step 5
While the broth is cooking, prep the remaining vegetables. Peel the potatoes and cut into medium cubes.

Rinse the bell pepper, remove seeds and stem, and cut into sticks.

Grate the remaining half of the carrot on a coarse grater.

Dice the second half of the onion.

Rinse the dill, pat dry, and finely chop. You can replace or supplement dill with other herbs, such as parsley or cilantro, or use a mix.

Strain the broth. Discard the softened half onion and carrot. Return the ribs to the broth. Place the pot over medium heat. Add the potatoes and spices to the broth. Cook, stirring occasionally, for about 10 minutes.

Heat vegetable oil in a skillet. Add the onion, carrot, and bell pepper and sauté, stirring, for about 5 minutes.

Transfer the sautéed vegetables to the soup. Simmer covered for another 10-15 minutes.

At the end, salt and pepper the soup if needed. Add the chopped dill.

Ladle the pork rib soup into bowls and serve. Enjoy!
