Pork Lagman with Noodles and Vegetables
This hearty pork lagman combines tender meat, vegetables, tomatoes and aromatic spices with noodles. Homemade noodles work especially well, but good-quality store-bought noodles are also suitable.

Step 1
Prepare the ingredients. Pork can be replaced with beef or lamb, although the cooking time may change. Add other spices according to taste if desired.
Step 2
Pat the pork dry with paper towels and cut it into medium cubes. Use boneless meat such as ham, shoulder, loin or tenderloin. If frozen, thaw it completely beforehand.
Step 3
Remove the seeds and stem from the bell pepper and cut it into strips. You can also dice it if preferred. The vegetable mixture can be varied by adding potatoes, eggplant, cabbage or pumpkin.
Step 4
Peel the radish and cut it into thin strips.
Step 5
Peel the onion and cut it into half-rings.
Step 6
Peel the garlic and finely chop or press it. Adjust the amount to taste.
Step 7
Finely chop the fresh herbs. The original recipe uses parsley and dill, but cilantro, green onions or a mixture of herbs also work well.
Step 8
Heat the vegetable oil in a cauldron or heavy pot over high heat. Add the pork and cook, stirring, for approximately 5–7 minutes, until browned. You can also cook the meat in a frying pan or multicooker.
Step 9
Season the pork with salt, paprika and chili pepper to taste. You can omit the chili or replace it with ground black pepper.
Step 10
Add the prepared vegetables to the pork and cook, stirring, for approximately 3–5 minutes.
Step 11
Add the canned tomatoes and pour in the broth. Bring everything to a boil. The canned tomatoes can be replaced with chopped fresh tomatoes, while the broth can be vegetable or meat broth, or simply water.
Step 12
Cover and simmer over low heat for approximately 40 minutes. Add more canned tomatoes or hot broth if you prefer a thinner, more soup-like consistency.
Step 13
Add the chopped garlic and half of the fresh herbs. Simmer for another 5 minutes.
Step 14
Cook the noodles in a large pot of boiling salted water until done, approximately 5–10 minutes. Follow the package instructions for the exact cooking time.
Step 15
Drain the cooked noodles in a colander and rinse briefly with cold water to prevent sticking, or toss them with a little vegetable oil if preferred.
Step 16
Divide the noodles among deep serving bowls and spoon the pork, vegetables and broth over them. Sprinkle with the remaining fresh herbs and serve immediately while hot. Flatbread or sour cream can be served alongside.
