Pork in Sour Cream Sauce in a Skillet

Step 1
How to make tender, juicy pork in sour cream sauce in a skillet? Prepare the ingredients. Any boneless pork works: loin, ham, shoulder, or neck if you want it fattier. I used shoulder and trimmed off excess fat. You can use homemade meat broth, or dissolve a little beef bouillon powder in boiling water.

Rinse the pork, pat dry, and cut into medium pieces.

Finely chop the garlic.
Step 4
Dissolve the starch in cold milk, stirring until no lumps remain.
Step 5
Pour the cold milk-and-starch mixture into the sour cream and mix well. This prevents the sour cream from curdling during stewing and also thickens the sauce.

Heat olive oil in a skillet and melt the butter.
Step 7
Add the pork and sear over high heat, stirring, until nicely browned.
Step 8
Add the garlic, salt, and pepper and sauté, stirring, for about 30 seconds.

Lower the heat to minimum. Pour in 250 ml (about 1 cup) meat or vegetable broth and stir again.

Bring the broth to a boil and simmer, covered, at a gentle boil for 20 minutes. This makes the pork tender. If it’s still tough after that, add a little more broth and stew for another 5-10 minutes.

Pour the sour-cream mixture into the skillet with the pork and stir.

Bring the sauce to a boil and simmer everything together for 10 more minutes at a gentle boil. Taste and add more salt and pepper if needed.

Remove the pork in sour cream sauce from the heat, plate it, and serve with any side dish. Enjoy!
