Pork Entrecote
Aromatic, tasty, hearty, and perfect for lunch or dinner! Pork Entrecote is a French-inspired dish. It will not take much time to prepare, but there are a few important details to know and keep in mind so the dish turns out excellent.

Step 1
How do you make pork entrecote? Prepare the ingredients. The key to a tasty entrecote is good-quality meat, so choose it especially carefully. First of all, give preference to chilled pork, as frozen pork is less desirable. Which pork cuts are best? I used pork neck, as this part contains streaks of fat and the finished entrecote will be juicier. Pork shoulder or ham will also work, possibly even with a small bone.
Step 2
Wash the meat well and dry it. Cut off any membranes from the pork, and remove sinews if needed. Then dry the meat with paper towels. Now cut the pork into pieces. Be careful here: they should not be too thick or too thin. The optimal thickness is about 1.5 cm / about 1/2 inch.
Step 3
Lightly pound the meat on both sides with a meat mallet. To avoid splattering, you can cover the piece with plastic wrap beforehand and pound it through the wrap. If you do not have a meat mallet, you can score the meat crosswise with the dull side of a knife.

Now for the spices. I used only red pepper. You can use black pepper instead. Other seasonings will also work well: Provençal herbs, dried thyme, rosemary, or garlic. But do not mix too many together; I recommend choosing one favorite spice. Do not salt the meat at this stage, as salt draws out moisture and the meat may turn out a little dry. Salt it at the very end of cooking. Generously sprinkle the meat on all sides with the chosen seasoning.
Step 5
Drizzle with a little vegetable oil and spread it over the whole piece. The oil can be absolutely any kind, from regular corn oil to high-quality olive oil.
Step 6
Heat the remaining oil well in a pan. For frying, the oil should be refined; otherwise, it may burn. Place the meat in the pan, reduce the heat slightly, and fry for about 7 minutes. A crust should form, which will seal all the meat juices inside the piece.
Step 7
Then carefully turn the meat over and fry for another 7 minutes. To make sure it is fully cooked through, cover the pan with a lid and cook over low heat for another 7 minutes. Pork must be cooked through completely, so keep an eye on this.
Step 8
Serve the entrecote with dry red wine. Add seasonal vegetable salads and fresh herbs. Enjoy!
