Pork chops with apples and cider

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Season the pork chops generously with salt and freshly ground black pepper. Heat the olive oil in a large, shallow ovenproof pan. Place the chops rind-side down first and fry until the fat starts to crisp and render, giving them a good head start. Turn the chops and lightly fry each side for about 1 minute, until the outside is golden and crusty. Remove the chops from the pan and set aside.
Step 3
In the same pan, using the rendered pork fat and juices, add the chopped onion and cook until lightly browned. Stir in the apple wedges and sage leaves, using only a small amount of sage so it doesn’t overpower the dish. Add the squashed juniper berries.
Step 4
Return the pork chops to the pan, nestling them among the apples and onions, and add the remaining whole apples. Pour in enough cider to just cover the ingredients. Season to taste, then transfer the pan to the oven and cook for about 30 minutes, or until the pork is cooked through and the apples are tender.
