Pomegranate and Cheese Salad

Step 1
How to make a salad with pomegranate, nuts, and cheese? Very simple and quick. First, prepare the ingredients from the list. For this recipe, choose small but firm tomatoes so they keep their shape at all stages. I used cherry tomatoes.
Step 2
Wash the tomatoes, pat dry, and cut in half. You can also use regular tomatoes. Choose ripe and juicy, but firm tomatoes. Soft ones won’t hold their shape and can turn into a shapeless mass while cutting and assembling, ruining the look of the dish.
Step 3
Break the blue cheese into pieces. In this salad, blue cheese (like Dor Blue) can be replaced with sharper types - Roquefort or Gorgonzola - or with milder cheeses such as white-mold cheeses like Brie or Camembert.
Step 4
You can use a store-bought mixed salad greens blend or make your own from whatever greens you have. My mix includes arugula, frisée, and radicchio. If you like, replace the mix with just one type of lettuce or with Napa cabbage.

Break the walnuts into small pieces. If you want, replace them with cashews, hazelnuts, or pine nuts. Or, instead of nuts, add peeled sunflower seeds toasted in a dry skillet.

Remove the pomegranate seeds.

Now prepare the dressing ingredients. I used extra-virgin olive oil, but you can use any vegetable oil you like. In a small bowl, combine the olive oil, lemon juice, pomegranate sauce, and spices. Mix well.

In a bowl, combine the salad greens, cherry tomatoes, cheese, and crushed walnuts. Drizzle with the dressing. Sprinkle pomegranate seeds on top. Serve the pomegranate and cheese salad immediately. Enjoy!
