Pollock with Carrots and Onions in a Skillet
Tender and very tasty - you’ll want to cook it again! Pollock with onions and carrots is first fried in a skillet, then simmered with tomato paste. The fish absorbs the flavor of the vegetables and turns out very soft, juicy, and fragrant. This dish is perfect for a family lunch or dinner.

Step 1
How to stew pollock with onions and carrots in a skillet? Prepare all the necessary ingredients. If the fish is frozen, defrost it in the refrigerator in advance.
Step 2
Clean the pollock, cut off the fins and tail, remove the black membrane inside the belly. Rinse the fish well, pat it dry. Cut the pollock into serving pieces and salt them.
Step 3
Peel the onion, rinse it, and slice into half rings or feathers.
Step 4
Peel the carrots, rinse them, and grate on a coarse grater.
Step 5
Add vegetable oil to a skillet and sauté the onion over medium heat, stirring, for about 3-4 minutes.
Step 6
Add the carrots to the onion in the skillet and stir. Fry the vegetables, stirring occasionally, until they are moderately soft.
Step 7
Dredge the pieces of fish in flour. You may need more flour. You can put the pollock into a small plastic bag with flour and gently shake it - the pieces will be evenly coated. Or pour flour onto a flat plate and coat the pieces on both sides.
Step 8
Heat vegetable oil in a skillet. Fry the pollock over moderately high heat until a light golden crust forms on one side.
Step 9
Turn the pieces of fish over to the other side and fry until golden as well.
Step 10
Place the fried pollock into the skillet with the vegetables.
Step 11
Dilute the tomato paste with water, add paprika, basil, and ground black pepper. Choose spices and seasonings to your taste.

Pour the diluted tomato paste over the fish, bring to a boil, and salt. Simmer the fish over low heat for about 20 minutes.
Step 13
Add the bay leaf and, if necessary, turn the fish pieces over. Simmer the pollock for another 10 minutes or so. The cooking time will depend on how your stove works and its power.

Serve the stewed pollock with carrots and onions with a side dish of potatoes, grains, or pasta. Enjoy!
